Sully's Ribs and Sauce

Description
This one turned out great and was some of the best ribs I have done.
The rub was on overnight and not heavy enough to not be able to see the meat
and bone through the rub.
In plastic wrap in the fridge for 18 hours.
Longer might even be better.
I used St. Louis ribs with the silverskin stripped off.
On the grill at 200/250 for 30 minutes on a side and then
into the covered turkey roaster in the oven at 275 for 2 1/2 hours.
I put two cups of apple juice in the bottom of the roaster
and the ribs were really loose on the bones when done.
Before going in the oven I squirted squeeze Parkay and honey on
one half and left the other half plain. Both were good, I think
the half with the butter and honey was better.
I had the sauce on the side and didn't mop during cooking.
Ingredients
Ribs
- 3 lbs of St. Louis ribs
- Dry Rub
- Sauce
- Butter or Parkay (optional)
- Honey (optional)
Dry Rub
- 4 T. Paprika
- 1 T. Packed dark brown sugar
- 1 T. Turbinado sugar
- 1 t. celery salt
- 2 t. sea salt
- 1 t. Accent
- 1 t. black pepper
- 1 t. cayenne pepper
- 1 t. dry ground mustard
- 1 T. granulated garlic
- 1 T. onion powder
- 1 t. oregano
- 1 t. thyme
Sauce
- 15 oz. bottle of A-1
- 15 oz. can of Hunts tomato sauce
- 1 cup of brown sugar
- 1/2 cup of apple cider vinegar.
Tools
- Grill
- Tongs
- Baking tray
- Plastic Wrap
- Medium bowl for rub
- Turkey Roaster
- Oven
- Meaturing cup
- Spatula
Directions
- Remove silverskin from ribs and place on baking trays
- Mix rub in bowl and apply evenly over ribs.
- Wrap ribs in plastic wrap and leave in refrigerator overnight.
- The next day, 4 hours before serving, preheat grill to 200-250
- Grill for 30 minutes per side
- Prehat oven to 275
- After grilling, move to turkey roaster.
- Add 2 cups apple juice to roaster pan to steam
- (optional) Add butter and honey to the top of the ribs
- Roast for 2 1/2 hours
- Right before removing roaster, mix sauce ingredients and simmer to combine. "Heat and Eat"
- Remove roaster and let rest for 10 minutes
- Serve hot with sauce for dipping
