Gayle's German Pancake

Ingredients

For pancake

  • 2 large eggs
  • 1/2 cup all purpose flour or gluten free all purpose baking flour
  • 1/2 c milk
  • 1/4 c butter
  • pinch of teaspoon salt

For apple filling

  • 2 pink lady or other apples
  • 2 tbsp butter
  • 4 tbsp brown sugar
  • 1/4 tsp powdered cinnamon

Tools

  • Cast iron dutch oven or large 12 cast iron pan with high sides.
  • Medium bowl for mixing
  • Blender/immersion blender/whisk
  • Knife for cutting apple
  • Spatula for clearing bowl
  • Oven

Directions

  1. Make Pancake
    1. Preheat oven to 375F. Insert dutch oven with the butter in it to melt.
    2. Beat eggs in medium bowl for 2 minutes with blender. They should be blended and slightly frothy.
    3. Blend milk
    4. Blend flour
    5. Blend butter that was in the dutch oven. Add a little butter at first to temper the batter.
    6. Pour batter into the warmed dutch oven and bake at 375F for 25 minutes.
  2. Make Apple Filling
    1. While pancake is cooking, core and dice apples into cubes.
    2. Cook butter and apples in a pan on low heat until apples begin to soften.
    3. Stir in sugar and increase heat to medium-high. Cook until apples get lightly carmelized.
    4. Stir in cinnamon and remove from heat.
  3. Serve
      The pancake should ride up the sides of teh pan making it curved.
  4. Cut pancake and serve with filling.
